Shell outerwear tends to be more durable and waterproof. Shells are great because you can wear as many or as little layers as you want underneath so you can adjust to warmer and colder weather. Shells tend to be more expensive because they're much more technical. Insulated outerwear is great for a more recreational skier. It's much warmer than a shell but doesn't offer the versatility of adjusting to different weather. Insulated outerwear is usually not as waterproof as well so it's not quite as expensive.
